Luxury Smoked Trout and Beetroot Salad

Ingredients

  • 300g Luxury Smoked Trout
  • 6 candy stripe beetroot, thinly sliced on mandolin
  • 1 cucumber, ribbons
  • 6 patty pans, thinly sliced on mandolin
  • Small handful mint leaves
  • 1 lemon, thinly sliced
  • 2 assorted microgreens
  • Edible flowers (nasturtiums if available)
  • Extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1.  Scatter the cucumber ribbons, beetroot, patty pans, mint and lemon on a large platter. Finish with smoked trout, microgreens and edible flowers. Drizzle with olive oil and season.
