Braai Gammon Steak with Orange and Mustard Glaze


  • 4 gammon steaks
  • Salt and pepper
  • Olive oil
  • 2 tbsp chopped Fresh thyme
  • Pinch dried chilli flakes
  • 1/4 cup orange marmalade
  • 1/4 cup honey
  • 3 tbsp wholegrain mustard


  1. Toss the gammon steaks with salt, pepper, olive oil, thyme and chilli flakes.

  2. Cook over medium coals for 6 minutes per side.

  3. Mix together the marmalade, honey and mustard then brush over the gammon and continue to cook for another 2 minutes on each side – the marmalade should become sticky and charred.

  4. Serve with potato bake and cucumber salad.
