Chicken Pepper Soup

Follow this recipe for Chicken Pepper Soup, a dish for your health, inspired by culture of Nigeria.

Chicken Marinade Ingredients:

  • 8 Boneless Free Range Chicken Thighs
  • ½ Red Onion (chopped)
  • 2 Cloves Garlic
  • 1 tbsp Salt
  • 1 tbsp Pepper Spice

Broth Ingredients:

  • 6 ¼ cups Chicken Stock
  • 4 tbsp Vegetable Oil
  • 1 Onion (quartered)
  • 1 Habanero (whole)
  • 2 Fresh Green Chillies
  • 1 Garlic Clove
  • 1 tbsp Pepper Spice
  • 1 Maggi Stock Cube ((store bought))
  • 2 tbsp Salt & Pepper

Chicken Marinade Instructions:

  1. In a large bowl, combine all the ingredients, coat the chicken and allow to marinade in the fridge for 30 minutes.

Broth Instructions:

  1. Sweat the onion, chili, habanero and garlic in a medium sized pot at medium temperature till soft.
  2. Add the rest of the ingredients and bring to a boil.
  3. Reduce temperature and simmer for 10 min.
  4. Strain the broth and discard of the solids.
  5. Return the broth to the same pot at medium temperature.
  6. Add all the marinated chicken ingredients and cook for 15 minutes or until chicken is cooked.
  7. The soup is ready once the chicken is cooked.
  8. Garnish with parsley and serve with fresh bread.
